Executive Chef

Rowlee is evolving its hospitality offering and we are seeking an experienced, hands-on Executive Chef to lead the culinary direction of our destination vineyard estate in the Orange wine region.

Set on 100 acres just outside Orange, Rowlee is known for fine wine, award-winning dining, premium events, and immersive guest experiences. This is a rare opportunity to take ownership of multiple food venues and play a pivotal role in shaping the future of a respected regional hospitality business.

About the Role

As Executive Chef, you will be responsible for all food operations across the Rowlee estate, including:

  • Rowlee Dining and Bar (award-winning fine dining)
  • The Garden Bar (bistro dining, high tea, cocktails)
  • Cellar Door dining experiences
  • Weddings, private events, and corporate functions
  • Production kitchen operations

You will lead and develop a high-performing culinary team, design seasonal and innovative menus, and ensure food quality, consistency, and profitability across all outlets.

This role combines creative leadership with strong commercial accountability and is a key member of the senior management team, working closely with the General Manager and Venue Manager.

Key Responsibilities

  • Lead all culinary operations across multiple venues and events
  • Design and deliver creative, seasonal menus using local and ethically sourced produce
  • Ensure consistent food quality, presentation, and guest satisfaction
  • Build, mentor, and lead high-performing kitchen teams
  • Manage food costs, labour, budgets, and stock control
  • Drive efficiency, waste reduction, and profitability
  • Ensure compliance with food safety, WHS, and sustainability standards
  • Contribute to the development of new food and beverage concepts and experiences

About You

You will be a confident culinary leader with:

  • Extensive experience as an Executive Chef or Executive Sous Chef in a high-end hotel, resort, or premium multi-venue environment
  • Proven experience delivering events, weddings, conferencing, and banqueting
  • A strong portfolio of creative, innovative menus
  • Solid commercial and financial acumen (food cost, labour, budgets)
  • A passion for local, seasonal, and ethically sourced produce
  • Proven ability to lead, motivate, and develop kitchen teams
  • Excellent organisational, leadership, and communication skills
