
Sangiovese

An elegant, Old World-inspired Sangiovese that captivates with its aromatic complexity and refined structure. The nose reveals enticing layers of sour cherry, cured meat, dried mushroom, thyme, and a whisper of nutmeg. On the palate, it unfolds with juicy vibrancy, showcasing flavours of cherry, raspberry, and plum, seamlessly intertwined with notes of dried herbs, tobacco, and a delicate touch of spice. The wine is beautifully framed by fine-grained tannins that provide a velvety texture and structural depth, leading to a sturdy, mouth-watering finish.
The fruit was harvested and immediately transported to the winery, with whole berries placed into three tonne open fermenters and allowed to cold soak for three days. The fruit was hand plunged and pumped over once a day and pressed after two and half weeks of fermentation. After pressing the wine was transferred to older barrels for 11 months maturation.
