Pale to mid lemon yellow with a green hue. Fruit-focused yet layered with complexity, this cool climate Sauvignon Blanc shows intense green melon, gooseberry, and ripe grapefruit over a backdrop of smoky lees, subtle oak, and hints of flint and mineral talc. The aromatics are abundant and distinctly varietal. On the palate, a soft and silky entry of gentle citrus flavours gives way to more exotic notes of guava and rockmelon. Layers of yeast-derived texture add depth, while supple acidity provides fine persistence and length to the finish.

Handpicked and chilled in the cold room before whole bunch pressing to ensure minimal phenolic extraction and maximum fruit expression. The juice was cold settled for 48 hours before racking to ferment. Some solids were intentionally retained in the juice to add complexity through ferment. Part of the juice was fermented in barrel to build further complexity and texture with the remainder in fermented in tank to enhance fruit expression. Extended time on lees post ferment completes the élevage of this Fumé style Sauvignon Blanc.
